破解麻婆豆腐下飯秘訣Mapo Tofu
材料:
板豆腐 300公克
豬絞肉 100公克
蔥 2根
蒜末 5公克
薑末 5公克
Ingredients:
300 gram block of Tofu
100 grams minced pork
2 lengths scallions
5 grams minced garlic
5 grams ginger
調味料:
A
辣豆瓣醬 2大匙
B
醬油 1茶匙
細砂糖 2 茶匙
水 100㏄
C
太白粉水 1大匙
花椒粉 1/8茶匙
Seasonings:
A.2 tablespoons spicy bean sauce
B.1 teaspoon soy sauce
2 teaspoons granulated sugar
100cc of water
C.1 tablespoon cornstarch mixed with water
1/8 teaspoon pepper
作法:
1.豆腐切丁;蔥切花,備用。
2.熱鍋,倒入少許油,先小火爆香蒜末、薑末,再放入絞肉炒熟。
3.接著放入辣椒豆瓣醬炒香,加入調味料B燒開後放入作法1的豆腐丁。
(重點提示:辣豆瓣醬要先炒香,麻婆豆腐香氣才會足夠!)
4.略煮滾一下,開小火,加入太白粉水,一面慢慢淋入太白粉水,一面搖晃鍋子,使太白粉水均勻散佈。
鍋鏟輕推,撒上花椒粉和蔥花後裝盤即可。
(重點提示:麻婆豆腐香而不麻的秘訣在於花椒要磨成粉,起鍋前再加入香氣更足)
Preparation Method:
1. Dice the tofu; cut up the scallions and set this aside.
2. Pour a little oil into a hot frying pan and begin with the garlic and ginger over low heat then add in the ground meat and stir-fry.
3. Then add the spicy bean sauce and saute while adding in seasonings B. Boil the Tofu from step 1. (Important point: Saute the spicy bean curd sauce first then adding the Tofu will maximize the flavor.)
4. Bring to a boil over a low flame and add the cornstarch and water to the Tofu shifting the pan from side to side slowly so that the cornstarch water will spread evenly. Move with the spatula onto a plate and sprinkle with pepper and onions.
(Important point: Mapo Tofu is delicioius but the secret is in the ground pepper. Clean out the frying pan before adding it for a more full flavor.)
